No time to cook steel-cut oats in the morning? If not, try this simple recipe that requires little or no cooking. You may want to lightly warm this on the stove in the winter months, but in the summer these oats can be eaten at room temperature or straight from the fridge. Add your favorite toppings and spices.

Serves 4

Ingredients 


1 cup organic steel-cut oats
1 1/2 tablespoons chia seeds
1 cup almond milk or non-dairy milk of choice
Pinch of cinnamon
Pinch of ground cloves
1/4 teaspoon Vanilla Extract
1 tablespoon maple syrup, honey or sweetener of choice, optional

Suggested Toppings


pumpkin seeds
coconut flakes
sliced bananas
berries
chopped pear or apple
raisins, dates or apricots 
toasted or raw nuts or seeds
almond butter
yogurt


Directions



Combine oats, almond milk, chia seeds, spices, vanilla and sweetener (if using) in glass jar or bowl with lid. Stir ingredients together, close lid, and refrigerate overnight. In the morning, remove lid and stir all ingredients again. Taste to adjust sweetness and seasoning. Serve with your favorite toppings and extra almond milk if desired.
